Spicy Thai Soup with Coconut Milk

- Cut the lemongrass into thin pieces. Cook the lemongrass and mange-tout for 10 minutes in boiling water, then drain.
- Peel and grate the ginger.
- Mix the Energy Diet Thai Soup with the milk and coconut milk. Pour the mixture into a saucepan.
- Add the cooked vegetables, ginger and lime juice. For a spicier flavour, add red curry and Nuoc-mâm.
- Remove from the heat and sprinkle with finely chopped carrots, mange-tout and coriander leaves.
- Serve immediately! Bon appétit!
